Ingredients:
- 18-24 large Strawberries
- 1 (8 ounce) package of cream cheese softened
- 1/3 cup sour cream
- 2/3 cup monk fruit sweetener (or granulated sugar)
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice
- 1 cup heavy whipping cream
- ½ cup Cappadona Ranch Mesquite Bean Flour
Directions:
- Prep the strawberries by cutting off the stems and slicing them in half. Cut a small sliver off the back of each berry half so they don’t wobble. Use a small melon baller to carefully hollow out the middle.
- Beat the softened cream cheese, sour cream, monk fruit sweetener, vanilla extract and lemon juice in a medium sized mixing bowl (DO NOT ADD heavy whipping cream) until smooth.
- In a separate bowl beat the heavy whipping cream until stiff peaks form.
- Fold the whipping cream into the cream cheese mixture.
- Fill a piping bag with cream cheese minture and pipe onto each sliced strawberry.
- Finish with a sprinkle of Cappadona Ranch Mesquite Bean Flour.
