Cappadona Ranch Mesquite Bean Pancakes

1 cup all purpose flour

3/4 cup Cappadona Ranch Mesquite Bean Flour (or other mesquite flour)

3 1/2 tsp baking powder

1/4 tsp salt

1 egg

2 tbs vegetable oil

1 cup milk

1 + cup milk


In one bowl mix dry ingredients. In a separate bowl whisk together wet ingredients then combine and mix both bowls. Add extra milk if needed for your desired consistency.  Ladle approximately 1/4 cup of the batter to a lightly oiled griddle at a medium heat. Flip and cook until each side is a golden brown. Serve with butter maple syrup or mesquite bean syrup. ENJOY!


This recipe makes approximately 12 average size pancakes
